Another recipe from Margaret. Can't wait to try it soon; haven't had this in awhile.
1 5/8 cup light brown sugar
1 5/8 cup dark brown sugar1/2 cup bread flour
1/2 cup cornstarch
1 Tbls. salt
1/2 cup shortening
6 large eggs
1 qt. milk
1 tsp. vanilla extract
3 (9-inch) regular pie crust
Preheat oven to 360 F. In the bowl of an electric mixer, combine the brown sugars, bread flour, cornstarch & salt together. Add shortening & mix until well blended. Add eggs, 1 at a time, beating well after each one. Gradually add milk, mixing well. Add vanilla. "Dock" the bottoms of the pie shells by slightly piercing them with a fork. Bake pie shells in the oven for about 10 mins. - to prevent them from becoming soggy. Allow to cool before adding pie filling. Pour chess pie filling into cooled pie shells. Bake pies for 45-50 minutes or until filling is firm. mmmmmm! Enjoy!
