Black Eyed Pea Fritters

A new way to use a Southern Favorite. 

These fritters are a great unique side for Pork and Steak which your guest will love.









Ingredients: 
1 cup sour cream
2 1/2 teaspoons Seasoned Salt, divided
1/4 teaspoon Pepper
2 cans (15 1/2 ounces each) black-eyed peas, drained and rinsed
2 eggs, lightly beaten
1 cup finely chopped onion
1/2 cup finely chopped red or orange bell pepper
1/2 cup flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup vegetable oil
Preparation:
1. Mix sour cream, 1/2 teaspoon of the seasoned salt and seasoned pepper in small bowl until well blended. Cover. Refrigerate until ready to serve.
2. Mash black-eyed peas in large bowl. Stir in remaining ingredients, except oil, until well blended.
3. Heat oil in large deep skillet on medium-high heat. Drop bean mixture into oil by 1/4-cupfuls, flattening slightly. Cook fritters, turning once, 7 minutes or until golden brown. Drain on paper
