My fav Cobb is from The Biltmore Hotel in L.A. Here's my best mockup of same. I prefer a nice Roqefort Dressing rather than a lighter vinegrette, but I do love this salad.
Ingredients:
4 cups bite-size pieces romaine lettuce
2 cups watercress or bite-sized bib lettuce
2 cups cut-up cooked chicken breast
4 hard-cooked eggs, chopped
2 medium tomatoes, chopped (1 1/2 cups)
1 medium ripe avocado, pitted, peeled and chopped
1/4 cup crumbled bleu cheese
8 slices bacon, crisply cooked, crumbled (1/2 cup)
Divide lettuce among 4 salad plates (I prefer shallow bowls). Arrange remaining salad ingredients in rows on lettuce. Serve with vinegrette or dressing of choice.
